Açaí Lavender Cheesecake


Wow your friends with this beautiful and decadent cheesecake that makes the perfect centrepiece for any tea party. 

Your friends will have no idea it’s vegan or indeed, how easy it is to make!



  1. Boil 125g of the cashews for 10 minutes.

  2. Blend the remaining nuts in a food processor.

  3. Add the cake base ingredients and blend for 2 minutes.

  4. Transfer the mix into a pan and press it along the base, then put it in the fridge for 20 minutes.

  5. Blend the boiled cashew with all of the filling ingredients.

  6. Spread the filling into the pan over the crust.

  7. Decorate with your favourite toppings.

  8. Freeze for 5 hours.

  9. Take it out 5 minutes before serving and enjoy!
