One of the best things to come out of lockdown was my housemate’s delicious vegan banana pancakes! 

Luckily, we had stocked up on Authentic Fruits Naked Banana slices so we could always add that little extra crunch to our pancakes.

And the freeze-drying process means the banana slices retain their natural nutrients and tropical flavour.

These chips are super healthy, super easy and ready-to-go!

Ingredients:

Method:

    1. Add the oats, oat milk, baking powder, salt and chia seeds into a large bowl and mix until you have a thick pourable batter.
    1. Put a large non-stick frying pan on a medium heat and, once hot, add ½ tablespoon of coconut oil, tilting the pan to cover.
    1. Use a ladle to spoon the batter into the pan.
    1. Each ladleful will make one pancake – make sure you leave space between each one, so they have room to spread out slightly.
    1. Cook the pancakes for 1 to 2 minutes, or until little bubbles appear on the surface and the bases are golden, then flip them over.
    1. When the pancakes are golden on both sides, transfer them to a plate, then repeat with more batter.
    1. Add extra oil, if needed.
    1. Layer the pancakes with any fruit (maybe a kinky kiwi like above), a decadent chocolate sauce of you choosing, and of course Authentic Fruits Naked Bananas!
